Sunee's Special Salad

Spinach leaves
Quinoa 
Kalamata olives
Small heirloom tomatoes, halved
Feta cheese 
Frozen artichoke hearts, cooked
Roasted cauliflower 

Mix with her black bean and corn salad

Sunee's Black Bean and Corn Salad with Dressing



Black Bean and Corn Salad

-4 ears of corn on the cob
-Basket of cherry tomatoes
-Handful of cilantro, chopped
- Diced 1/4 - 1/2 red onion
- Can of black beans, rinsed

* steam corn lightly in husk & let cool before slicing off the kernels
* chop tomatoes in half and place in bowl with corn, beans, and cilantro

Dressing:
- 1/4 cup red wine vinegar
- handful of cilantro leaves
- 1 garlic clove
- 3/4 cup olive oil
- salt & pepper to taste

* place vinegar, cilantro, and garlic in blender
* blend and add olive oil slowly to emulsify
* add salt and pepper
* pour over salad and mix just before serving

Serves 8
